Sweet Potato Breakfast Loaf

Ingredients:
2 c. almond flour
½ c tapioca flour
¼ tsp. salt
½ tsp. nutmeg
1 tsp. cinnamon
¼ tsp. cloves (optional)
2 eggs
¼ c. melted oil or butter (I like coconut or ghee)
2 tsp. vanilla
Instructions:
1. Preheat oven to 350° F
2. Line a loaf pan with parchment paper.
3. Add all wet ingredients to a mixing bowl and blend with a hand mixer until smooth.
4. Add in dry ingredients and mix until combined.
5. Pour the batter into loaf pan and cook for 50-60 mins. Stick a toothpick/knife into the
center of the loaf. If toothpick comes out clean, it’s done!
